Snow Again!

It may be hard to tell, but that is snow in my front lawn! Texas doesn't normally have snow, but I guess the weather doesn't care what I think. Today is also Stuart's birthday! He got to come home early because of the snow. Happy Birthday to him!





Stuart and I had a final stop at Temple Square in Salt Lake City Utah. Thank you to Bruce and Reva for being so kind and hosting us during our stay. We love you!!!

A Visit to Grandpa Neff


Stuart, Ginger, and I went to visit our great aunt Catherine and Grandpa Neff. He turned 99 this year!

We visited with friends and Grandma McAllister while we were in Utah. Stuart is sitting with his friend Sean and sister Ginger.

Stuart and I hiked the Y in Provo, UT and saw some amazing views and sunset. We couldn't have been more thrilled to be there.

Did She Say Healthy?

So Stuart and I are trying to eat healthier in pursuit of a healthy lifestyle. We have been trying some very good vegetarian recipes. These are bean enchiladas. They call for:

1/2 cup of chopped onion
1 chopped bell pepper
2 tbsp of salsa
2 cups of pinto beans
1 cup of frozen corn
another cup of salsa
corn tortillas
1 tsp of cumin

Preheat you oven to 375. Saute the onions and pepers in 2 tbsp of salsa until soft. Add the beans, cumin, and frozen corn, and heat through. Brush the insides of the tortillas with salsa and add filling. Roll and place in a 13x9 pan. Add desired amount of salsa on top, and sprinkle lightly with cheese. The less cheese the healthier. Bake for 15 minutes and serve.

We loved this dish, especially with steamed broccoli, peppers, and summer squash on the side. We hope you like them too!

By My Sister's Request



My sister has requested that I publish pictures of my Thanksgiving decorations. I still have my leaves and pumpkins out, but I traded the witch and Halloween pumpkin for a turkey and pilgrims. Thanksgiving has extra meaning for me this year since I have so much to be thankful for.
